How do we get most of our food locally?

gardenIan Lillington is a permaculturist who is qualified as a trainer, and is experienced as a designer of sustainable homes and land systems.  He is editor of the Mount Alexander Sustainability Group’s on-line newsletter and involved with a wide range of community and business ventures that support sustainable living.

In 2007, he published a book called The Holistic Life – a Beginners’ Guide to Permaculture *.  The book is an intro to permaculture and also describes the house he designed and built from rammed earth and re-cycled materials in South Australia. 

In 2006 they moved to Castlemaine, Central Victoria, where Ian is involved with the Mount Alexander Sustainability Group, the Growing Abundance permaculture project and teaching PDCs.

Ian also works for the National Centre for Sustainability and for a project that has carried out eco-retrofits of five neighbourhood houses, called Greener Houses.

Incentive payment from the Bendigo Council

Council is offering the incentive in the form of a rate rebate. To be eligible, property owners must enter into an agreement with the Trust for Nature. A Trust for Nature conservation covenant will attract a once off up front payment of $25 per hectare of land protected and a 100 per cent rate rebate on the protected area thereafter. The Government gives away our native forests for next to nothing (woodchips from native forests are sold for $2.50 a tonne!) and the multinational paper company is happy to profit from the proceeds. There are more than 2 million hectares of plantation forests in Australia, but companies like Australian Paper have rejected them because it is cheaper to keep buying woodchips that come from logging native trees. Lentil and Walnut Burger with mustard - Very easy and scrumptious! - Youtube link

vege-burger You will need:
2 cans Lentils, 12 colves garlic oregano, cumin, 2 eggs, walnuts breadcrumbs,
1 1/2 onion, mustard
  2 cans of Lentils, mushed with 12 cloves garlic -minced, 1 1/2 tsp oregano, 2 tsp (or more) of mustard, 1 cup chopped walnuts (roast them in the oven for a bit if you like), 2 tsp cumin, 1 1/2 c diced onion, 2 beaten eggs, 1 cup of breadcrumbs for a binding agent. Mix together and add a bit of milk if you need to, 2 tbs olive oil, salt and pepper. Mix together. Fry in hot pan for about 4 minutes each side.

You will need:

2 cups jasmine rice, washed and drained
1 cup (100g) grated mozzarella
200g goats cheese
1 sprig rosemary, leaves removed, finely chopped
100g goats cheese, cut into small cubes
1 cup plain flour
3 eggs, lightly beaten
2 cups panko breadcrumbs
vegetable oil, for frying
basil sprigs, to serve

 

Step 1: Bring 1L of water and rice to the boil in a saucepan with a tightly fitting lid. Reduce heat to low and cook with lid on for about 10 minutes until the water has absorbed. After 10 minutes, remove from heat and stand, covered, for 15 minutes. Combine the mozzarella, half of the goat’s cheese and rosemary in a bowl. Add the rice to the bowl and mix until combined and the cheeses have melted. Season well with salt. Place in fridge for 10 minutes until cool.
Step 2: Divide the arancini mixture into 16 and form into patties. Cut the remaining goat’s cheese into small cubes. Place a piece of goat’s cheese inside each patty and enclose the rice mixture around it. Set up 3 bowls; 1 with flour, 1 with eggs and 1 with breadcrumbs. Dust each patty with flour, dip into the eggs, then coat in breadcrumbs.
Step 3: Meanwhile, add enough oil to a large frying pan to come 1cm up the side of the pan. Heat over medium-high heat. In batches, fry the patties for about 2 minutes each side or until golden. Transfer to a tray lined with paper towel. Season with salt.
Step 4: Serve arancini with tomato sauce or relish and basil sprigs. If you would like the full recipe, you will find it here
